It is asparagus harvest time at Middleton Farm!
Sam and Santos have been hard at work picking asparagus. It is looking to be a robust season. Some do not know that asparagus grows straight out of the ground. When asparagus is ready to harvest, the field looks like a forest of mini bamboo trees. It is a sight we look forward to every spring.
We love to eat asparagus raw, cooked, or even pickled. Our favorite preparation? Lightly poached and smothered in salt and olive oil (we prefer Middleton Farm olive oil but any local olive oil tastes great!).
